We Interrupt This Sabbatical To Bring You…

…a request.
I’m still attending Time Management University (Go PDA’s!), and have been trying to come up with ways to free up some time in my day. One thing that might help is if I start fixing slow cooker dinners for most nights. I have a fix-it-and-forget-it cookbook full of yummy recipes, but cracking it open would take too much work, so I am asking you guys. What is your favorite crock pot meal? Please feed (snicker, guffaw) my comment box with tasty recipes.

  1. Hi V! I haven’t cracked mine open in a LONG time, but as fall weather emerges, I am going to be crock-potting a lot. I will let you know. 🙂 My favorite (easy)things to make in a crock pot are to take a variety of veggies I have along with beef and add water with flavorful herbs and spices. Adding tomato sauce is good too, and to stretch it, I add rice during the last 30 min (white rice) and 45 min-hour (brown rice). Allrecipes.com has a search, and you can be pretty certain that the recipes with 5 stars are yummy! Check out their crock pot section.

  2. One of our favorites is simply a meat sauce for spaghetti. You just brown the ground beef (and a little sausage if you like) and drain. Add the meat and one or 2 jars of your favorite spaghetti sauce and let simmer in your crock pot all day. It has a wonderful flavor.

Also, a simple one is chicken or pork with cream of mushroom soup. The soup makes a great gravy to serve with rice or noodles or potatoes.

A new favorite is making barbacoa out of a roast like Chipotle.
I use a roast and season it with cumin and mexican spices. I cook it all day in the crock pot. I shred the meat before we eat and serve it on totrillas with rice and beans, and veggies.
There are many recipes online for this. I am still looking for the perfect one.
